Recipe: Grandma Johnson’s Swedish Pancakes

2 eggs
1 cup milk
1 cup flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 cup sugar (slightly less)

Butter 11×15 pan.

Heat oven to 400-425 F.

Beat eggs. Add milk. Beat in dry ingredients. Beat well. Pour into pan. Bake 15-20 minutes.

Serve with lingonberry butter and powdered sugar.

Lingonberry butter: 3 parts lingonberry jam to 1 part butter.
